Soave DOC is a white wine based on Garganega grapes produced in the province of Verona, in Veneto. It is vinified with two different styles - still and sparkling - and totally provides four typologies; two of these - Classico and Colli Scaligeri - in reality are areas that mark the specificity of the territory.
The scope of the designation includes a large hilly area east of Verona that extends to the border with the province of Vicenza. The climate is temperate.
Tasting
The designation has two styles - still and sparkling - altogether four typologies. The most widespread of these is the base, Soave, which then determines the structure of the other ones. In all these cases, Garganega grapes are often combined with those of Trebbiano di Soave or Chardonnay - at most 30% - to give the wine the freshness and flavor of which Garganega is a bit lacking.
Its color is not very intense straw yellow; its aromas are delicate and recall more floral notes (white flowers) and fruity (cherry, almond); the taste is dry, fresh, sapid, moderately soft. Nt to be forgotten in the cellar, this wine must be drunk young to appreciate its delicacy.
