Trento DOC, not to be confused with Trentino DOC, is one of the important Italian designations in the sector of sparkling wines made with the Metodo Classico, where fermentation takes place inside the bottle. In this specific case, the minimum permanence in contact with the yeasts, before they are eliminated with disgorgement, is 15 months; 24 months if the wine is vintage, that is if produced with grapes of the same vintage.
It is produced in 74 municipalities located in the main valleys of the province of Trento, covering an area of about 800 hectares. Historically it was the first DOC reserved exclusively for a sparkling wine, even if the production started much earlier, at the beginning of the last century.
Environment
The territory is purely mountainous; the altitude above sea level of the vineyards varies from 100 m of the valley floor up to 800 m of mountain slopes. The soil has good drainage conditions, above all for the slope but also because it is mainly made up of stony limestone debris in the upper parts, from moraine deposits in the lower parts.
The climate is mountainous, with heterogeneous conditions in relation to the altitude and the orientation of the valleys towards the sun. Winters are cold and snowy, hot summers and, at the bottom of the valley, sultry. In the Sarca valley, the presence of Lake Garda, allows you to have a more Mediterranean climate, with milder winters and less sultry summers.
Profile
The white type is straw-yellow in color, sometimes with greenish reflections. The scent is delicate and elegant, with clear hints of yeast and fresh fruit. The taste goes from dry to sweet depending on the residual sugar, always lively and characterized by a good acidity.
The rosé type ranges from pale pink to cherry pink; the scent is delicate, with intense fruity notes of strawberries, currants, raspberries; the hint of yeast is pleasantly present. The taste goes from dry to sweet depending on the residual sugar, lively, very velvety and elegant on the palate.
Food pairing
Trento DOC goes well with starters, with vegetable-based dishes, with fried fish and with fish dishes, but it can also be drunk throughout the meal.
