In the Italian market the word "novello" (that is "young") is almost unknown. Nevertheless, it is recognised by law and attributed to a specific wine category, with the following caracteristics:
- they are bottled by 31 December of the year in which the grape harvest occurred;
- they must be produced by fermentation with carbon maceration, for at least 40% of the total production;
- the minimum alcoholic strength may not be less than 11%;
- the maximum limit for residual sugars must not exceed 10 g/l.
