Rondinella is a vine that is used in a complementary way to Corvina, from 5% to 30% in all wines produced in Valpolicella. It is also cultivated at the highest altitudes of the territory and, thanks to its sugary content, it is particularly used in the Recioto della Valpolicella DOCG. It is suitable for the production of both ready-to-drink and aging wines.
Tasting
The prevalent color is ruby red, from medium intense to intense. With aging it tends to become garnet red. The aroma is intense and moderately complex. In the young wines there are distinct floral notes of violet, fruity notes of berries and blackberry, slight vegetal notes of pepper. Balsamic and spicy notes also emerge in aged wines. The taste is moderately intense and pleasant, characterized by a high sapidity. The wine produced is usually bodied and not very tannic.
